Grilled shrimp skewers with pineapple, an easy Hawaiian inspired summer recipe.
- 120 ml (1/2 cup) lime Juice
- 4 cloves of garlic
- 2 tbsp of chayote seeds
- 2 tsp of allspice berries
- 2 tsp of oregano
- 2 tsp of salt
- 2 tsp of whole black peppercorn
- 120 ml (1/2 cup) of olive oil
- 1 pineapple cubed (discard core)
- 2 red onions slliced
- 1lb of shrimp
- In a blender combine: lime juice, salt, garlic, chayote seeds, allspice berries, oregano, salt, black peppercorn. Blend until smooth.
- Slowly add olive oil, continue blending.
- Prepare skewers by layering shrimp, sliced onions and pineapple. Start with shrimp, you should be able to have 3 shrimps on each skewer.
- Add skewers to a baking dish and pour marinate over them. Refrigerate from 1-3 hours.
- Grill on medium heat, 3 minutes per side. Enjoy!
