Cousin’s Maine Lobster by C.R.

If you love lobster, you have to try the lobster roll at Cousin’s Maine Lobster truck in the new Frisco Rail Yard food truck park.  I’m not sure if it is there all the time, but it is just like being on the coast of Maine in the middle of the summer.  The Maine lobster roll is just like it sounds: Lots and lots of claw and tail meat with just a little mayo. I don’t think that there was any filler at all.  I don’t even think they used celery salt. The big New England split top bun was just like they make on the beach. it was warm and yummy. There are lots of other choices in the Rail Yard, but this is the truck to visit. There are lots of choices on the menu, too, but the lobster roll is the biggie.  Some people might think that $15 is a lot for a sandwich, but not this sandwich.  There is a Connecticut lobster roll, too. It uses melted butter, not mayo, and the meat is hot, not refrigerated. Oh, if you’ve never had a Maine whoopee pie, you want to try one of those for dessert. Well, even if you HAVE had one, have this one, too. Sweet chocolatey cake goodness with icing in the center. Mmmmm.  – C.R. in Frisco
