Grilled Shrimp & Pineapple Skewers

Grilled shrimp skewers with pineapple, an easy Hawaiian inspired summer recipe.

  • 120 ml (1/2 cup) lime Juice
  • 4 cloves of garlic
  • 2 tbsp of chayote seeds
  • 2 tsp of allspice berries
  • 2 tsp of oregano
  • 2 tsp of salt
  • 2 tsp of whole black peppercorn
  • 120 ml (1/2 cup)¬†of olive oil
  • 1 pineapple cubed (discard core)
  • 2 red onions slliced
  • 1lb of shrimp
  1. In a blender combine: lime juice, salt, garlic, chayote seeds, allspice berries, oregano, salt, black peppercorn. Blend until smooth.
  2. Slowly add olive oil, continue blending.
  3. Prepare skewers by layering shrimp, sliced onions and pineapple. Start with shrimp, you should be able to have 3 shrimps on each skewer.
  4. Add skewers to a baking dish and pour marinate over them. Refrigerate from 1-3 hours.
  5. Grill on medium heat, 3 minutes per side. Enjoy!
